Green Eggs and Ham: Bell Pepper Egg-in-a-Hole

We love Green Eggs and Ham book. This is one of the first Dr. Seuss books I read to CJ. We enjoying reading it aloud together. To know more about the book check the Wikipedia link here, www.seussville.com for activities and games.

I saw this Bell Pepper Egg-in-a-Hole, Marthastewart recipe pinned all over at pinterest and we gave it a try to go along with book. CJ loves to eat egg and helps in cooking egg omelet, boiled eggs. She was giggling and "Mommy, where did you find the recipe for the green eggs?"

With St. Patricks Day coming up in March, this recipe is a perfect clover Snack/Recipe too!

You can also use green food coloring to color the egg but we preferred it white

Bell Pepper Egg-in-a-hole

Ingredients

1 Green Bell Pepper
Eggs
Ground Pepper and Salt
1 teaspoon olive Oil

Directions

Slice up your pepper and remove the seeds. Store the edge cups we made a Bell pepper egg cup using Microwave.


In a large cast-iron or nonstick skillet, Spray/heat 1 teaspoon oil over medium-high. Put a pepper slice into a nonstick pan. Then crack 1 egg into the middle of each pepper ring.


Season with salt and pepper. Cook until egg whites are mostly set. We don't like the yolks runny, so i let it cook well. Gently flip and cook. Don't worry if some white spills out. We can trim it later


Trim the white outside the bell pepper ring with a butter knife


Serve with Bread toast/Rice!

Bell Pepper Egg cup(Microwave method)

Ingredients

Bell Pepper cup
Egg White
Ground Pepper and Salt

Directions

Beat the egg whites/whole eggs with salt and pepper.

Pour the egg inside the cup


Place the Bell pepper in microwave safe plate and Microwave for 2 mins or until egg gets cooked.

  3. Thank you for linking this fun post to the Kids'Weekly Co-op. I love the way that books make us so creative with our kids. As a kid I never read Dr Suess. He wasn't available in my town as a child in the UK. But since living in Turkey, with DR Suess available I am discovering his magic for the first time with my own kids. We really love 'The Foot Book'. Thanks again. We will be trying out the green eggs.)
